Nourish Your Way to Wellness: Organic Quinoa Khichdi for Diabetes Management

Ingredients:

  •     1 cup quinoa, rinsed
  • 1/2 cup split mung beans (moong dal), washed and drained
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 carrot, diced
  • 1 potato, diced
  • 1/2 cup green peas
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 4 cups water
  •     2 tablespoons organic cow ghee

Instructions:

  1. Heat cow ghee in a pressure cooker or large pot.
  2. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until golden brown.
  4. Add chopped tomatoes and cook until they turn soft and mushy.
  5. Add diced carrots, potatoes, green peas, and washed mung beans. Stir well.
  6. Add rinsed quinoa, turmeric powder, coriander powder, garam masala, and salt. Mix everything together.
  7. Pour in water and stir to combine all the ingredients.
  8. If using a pressure cooker, close the lid and cook for 3-4 whistles. If using a pot, cover and simmer until quinoa and lentils are cooked through and the mixture is creamy (about 20-25 minutes).
  9. Once cooked, let the pressure release naturally or carefully open the lid of the pot and your khichdi ready to eat.
